Ham-wrapped baked figs (GAPS)

Figs are amazing fruit. They can be eaten fresh, dried or made into a thick jam. I have tried my fist fresh fig about 15 years ago and my love for it is still strong. I adore the juicy flesh with the little crunchy seeds and the finger-like projections in the texture. Perfect as they are for supplementing breakfast or eaten as a snack. With an added ingredient or two they turn into an amazing appetizer, and an awesome party food.

You will need:
fresh, juicy figs (2 figs per person)
prosciutto crudo (2 slices per person) - preservative free!
1/3 tsp ground cinnamon

2 tbsp soured cream
and 1/2 tsp honey, to serve

1. Rinse the figs, pat them dry with a paper towel, cut them in half.
2. Lightly sprinkle the halved figs with some ground cinnamon.
3. Tear the prosciutto slices in half.
4. Wrap each fig half into the halved prosciutto slice.
5. Arrange the wrapped figs on a baking tray and place the tray into a preheated oven and bake at 170 C for about 12 to 15 mins until the ham gets some colour. The kitchen will smell fantastic!!
6. Take the tray out and leave to cool for 3 to 4 mins (the juicy fig is very hot!)
7. Serve with honey sweetened home-made soured cream. Enjoy!

Tip: Omit the soured cream for PALEO. Use coconut whipped cream instead.
