Raw custard (GAPS)

Thick and creamy and ready in 1 minute

The yolk of a chicken egg, this deep golden yellow energy ball is full of vitamins (A, D, E, K) and minerals, it contains all of the egg's fat and cholesterol, and it expands to a thick cream when whipped. This simple dairy-free dessert is ready in 1 minute from start to finish. Enjoy as it is or dip some sweet almond thins in it for added pleasure.

You will need (serves 1 or 2 for sharing):
2 medium egg yolks
1 tsp honey
1/2 tsp ground cinnamon

1. Separate the eggs (save the whites to make tahini crackers, coconutties, white chocolate muffins, or coconut full moons). Put the egg yolks in a tall glass, add the honey and half the cinnamon.
2. Immerse an electric whisk and beat for 45 to 60 seconds or until it expands to a pale yellow thick cream.
3. Sprinkle with the remaining cinnamon and spoon out with a long handle sundae spoon OR pour into an ice cream bow, sprinkle with the cinnamon and dip the almond thins into the rich cream. Enjoy!!
